The grapes were destemmed and crushed into a tank for pre-fermentation cold soak for 4 days. Alcoholic fermentation took place with selected yeasts at 27 - 29 degrees celcius. The process concluded with a post-fermentation maceration for approximately 2 weeks. Malolactic fermentation took place naturally in oak barrels. Aged in french oak barrels.

Viu Manent

Ruby red with a violet hue. The very fresh nose recalls red fruits such as cassis and sour cherries along with notes of evolution, spice, and fine leather. The palate is medium bodied, fresh, and vibrant with very good fluidity leading to a persistent, deep, and pleasing finish.
